Asparagus And Parmesan Salad
- 1 lb. green and/or white asparagus
- 3 Tbsp. olive oil
- 1 Tbsp. lemon juice
- 1 tsp. fresh thyme or basil
- 1/4 tsp. Dijon style mustard
- 1 clove garlic, minced
- salt and pepper
- finely shredded Parmesan cheese
- parsley
- basil
- slivered garlic (optional)
- Place asparagus in a steamer basket.
- Place basket in a large skillet over boiling water.
- Reduce heat, cover and steam for 5 to 7 minutes or until asparagus is crisp tender.
- Remove from steamer and cool slightly.
- Meanwhile, for dressing, in a screw top jar, combine olive oil, lemon juice, thyme, mustard, garlic, salt, and pepper to taste.
- Cover and shake until combined.
- Arrange asparagus on a platter.
- Drizzle with dressing.
- Sprinkle with cheese, parsley and if desired basil/garlic.
