Asparagus And Parmesan Salad

  1. Place asparagus in a steamer basket.
  2. Place basket in a large skillet over boiling water.
  3. Reduce heat, cover and steam for 5 to 7 minutes or until asparagus is crisp tender.
  4. Remove from steamer and cool slightly.
  5. Meanwhile, for dressing, in a screw top jar, combine olive oil, lemon juice, thyme, mustard, garlic, salt, and pepper to taste.
  6. Cover and shake until combined.
  7. Arrange asparagus on a platter.
  8. Drizzle with dressing.
  9. Sprinkle with cheese, parsley and if desired basil/garlic.
