Lizzies(Fruit Cake Cookies)
- 1/4 c. margarine
- 1/2 c. light brown sugar
- 2 eggs
- 1 1/2 c. sifted flour
- 1 1/2 tsp. soda
- 1 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. cloves
- 1 lb. raisins
- 1/2 c. bourbon
- 1 lb. pecan halves
- 1/2 lb. citron, diced (candied pineapple may be substituted for citron)
- 1 lb. candied cherries
- Cream margarine, gradually beat in sugar.
- Add eggs, one at a time, beating well after each addition.
- Sift flour with soda and spices.
- Add to margarine mixture.
- Soak raisins in bourbon at least one hour to plump; then add to margarine mixture, along with nuts and fruit.
- Drop from teaspoon on buttered cookie sheets. Bake at 325u0b0 for 15 minutes.
- Store in airtight container.
- Can be frozen.
- Makes 120.
