Key Lime Crispies
- 1 3/4 c. sugar
- 1 c. butter or margarine
- 2 eggs
- 2/3 c. oil
- 4 c. all-purpose flour
- 1 tsp. baking soda
- 3/4 tsp. salt
- 1 1/2 Tbsp. Key lime juice
- Confectioners sugar for sprinkling over baked cookies
- Preheat oven to 375 degrees. Cream together the sugar and butter.
- Add the eggs and oil and beat well. Combine flour, baking soda, and salt. Stir to mix. Add to the creamed mixture along with the Key lime juice.
- Beat until smooth and well mixed. Roll the dough into small balls about 1 inch in diameter. Place on ungreased cookie sheet, spacing cookies about 2 inches apart. Using the bottom of a glass dipped into sugar, flatten the balls. Bake for 10 to 12 minutes or until lightly browned around the edges.
- Remove from the pan immediately to a wire rack. Dust with confectioners' sugar.
