Taco Soup
- 2 lb. lean ground beef
- 1 small onion, chopped
- 1 (16 oz.) can pintos, rinsed and drained
- 1 (16 oz.) can kidney beans, rinsed and drained
- l (16 oz.) can lima beans, rinsed and drained
- 1 (14 1/2 oz.) can hominy, drained
- 3 (14 1/2 oz.) cans stewed tomatoes
- 3 (4 oz.) cans chopped green chilies
- 1 tsp. salt
- 1 tsp. pepper
- 1 (1 1/4 oz.) pkg. taco seasoning
- 1 (1 oz.) pkg. Ranch dressing mix
- 1 1/2 c. water
- 1 small can tomato sauce
- Brown ground beef and onions; drain fat.
- Add all remaining ingredients; bring to a boil.
- Reduce heat and simmer 30 minutes. Top each bowlful with cheese.
- Serve with tortilla chips and sour cream.
- Serve with shredded cheese.
