Beef With Broccoli On Noodles
- pepper
- 3/4 lb. topside or rump steak strips, salted with garlic
- 2 onions, sliced around
- 4 oz. dried Chinese egg noodles
- 1 tsp. fresh chopped ginger (optional)
- 1 Tbsp. soy sauce
- 1 Tbsp. oil
- 1 tsp. sugar
- 1/2 tsp. salt
- 2 Tbsp. cornstarch
- 1/4 pt. beef stocked broccoli
- m.s.g. (optional)
- oil (for frying noodles)
- carrots (optional), quick cooked, beginning to tender
- Cook noodles in boiling water 5 minutes.
- Drain well. Marinate meat, ginger and soy sauce 30 minutes.
- Heat oil in wok or pan.
- Add meat, stirring constantly, until meat changes color. Mix other dry ingredients and add to beef stock and pour over meat in pan.
- Bring to a boil, stirring.
- Add the onions and simmer for 5 minutes.
- Add broccoli and carrots.
- Cook until hot.
