Enchilada Bake
- 2 lb. ground chuck
- 1 pkg. taco seasoning
- 1 can refried beans
- 1 can sweet peas, drained
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- salsa
- flour tortilla shells
- 2 lb. box Velveeta
- 1 small can Ro-Tel
- 1 small can chopped chilies
- 1 can cream of mushroom soup
- 1 can Cheddar cheese soup
- sour cream
- black olives
- mushrooms
- Brown ground chuck, onion and green pepper and drain fat.
- Mix in taco seasoning, refried beans and sweet peas.
- Add salsa to desired consistency.
- Place meat mixture (approximately 2 tablespoons) in a flour tortilla.
- Roll; place into cake pan. Fold side down.
- Fill cake pan with enchiladas.
