Chocolate Chip Meringue Bars
- 2 c. sifted flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/3 c. shortening
- 1/2 c. brown sugar
- 1/2 c. sugar
- 1 tsp. vanilla
- 2 egg yolks, beaten
- 3 Tbsp. water
- 1 (6 oz.) pkg. chocolate chips
- 2 egg whites
- 1 c. packed brown sugar
- pecans (optional)
- Sift together dry ingredients; set aside.
- Combine in a bowl the sugars and shortening; beat until light.
- Add vanilla, egg yolks and water; beat until smooth.
- Add dry ingredients.
- Spread mixture evenly in a greased 13 x 9 x 2-inch pan.
- Sprinkle over top the chocolate chips.
- Place the egg whites in a bowl and beat until frothy.
- Add, while beating, the 1 cup brown sugar.
- Beat until the sugar is completely blended.
- Spread evenly over batter. Sprinkle with chopped pecans, if desired.
- Bake at 350u0b0 for 30 minutes.
