Mincemeat

  1. Put beef suet and raisins through food grinder, using coarse blade.
  2. Put citron and apples through grinder.
  3. Combine
  4. all in a heavy kettle and add remaining ingredients in order, except brandy.
  5. Bring to boil, stirring constantly.
  6. Reduce heat and simmer 1 hour, stirring frequently.
  7. The mixture will scorch easily.
  8. Remove from heat and stir in brandy.
  9. Ladle into
  10. pint jars, leaving 1/2-inch headroom and process at 10 pounds pressure for 20 minutes or in a boiling water bath for 1 hour and 30 minutes.
  11. Makes 5 pints.
