Melon With Smoked Turkey
- 1 small or 1/2 large honeydew or other melon
- 8 lettuce leaves
- 8 cherry tomatoes
- 8 oz. slices smoked turkey
- Italian parsley or mint leaves for garnish
- 3 Tbsp. lemon juice
- 2 Tbsp. oil
- 1 Tbsp. water
- 1/2 Tbsp. Dijon mustard
- 1 Tbsp. tarragon
- 2 Tbsp. chopped red pepper
- dash of salt and pepper
- Combine lemon juice, oil, water and mustard in bowl.
- Add tarragon, red pepper, salt and pepper.
- Refrigerate.
- Rinse melons, remove seeds.
- Cut into wedges; cut thin slices and loosen gently from peel, but leave peel on.
- Rinse lettuce leaves and tomatoes. Cut tomatoes in half; drain well.
- Place on serving platter.
- Roll turkey breast slices loosely.
- Place turkey rolls and melon wedges on platter.
- Pour dressing over.
- Garnish.
- Makes 4 servings.
