Melon With Smoked Turkey

  1. Combine lemon juice, oil, water and mustard in bowl.
  2. Add tarragon, red pepper, salt and pepper.
  3. Refrigerate.
  4. Rinse melons, remove seeds.
  5. Cut into wedges; cut thin slices and loosen gently from peel, but leave peel on.
  6. Rinse lettuce leaves and tomatoes. Cut tomatoes in half; drain well.
  7. Place on serving platter.
  8. Roll turkey breast slices loosely.
  9. Place turkey rolls and melon wedges on platter.
  10. Pour dressing over.
  11. Garnish.
  12. Makes 4 servings.
