Strawberry Coconut Divinity(Make On A Dry Day With Low Humidity)
- 3 c. sugar
- 3/4 c. light corn syrup
- 3/4 c. water
- 2 egg whites, beaten stiff
- 1 (3 oz.) pkg. strawberry-flavored gelatin
- 1/2 c. flaked coconut
- 1 c. chopped walnuts
- In a heavy bottom saucepan, combine the sugar, corn syrup and water and bring to a boil, stirring constantly, then cover and let boil 3 minutes while the steam washes down any crystals formed on the sides of the pan.
- Remove lid and cook to hard ball stage (250u0b0 on your candy thermometer).
- Stir occasionally while cooking to hard ball stage.
- While this is cooking, beat egg whites and combine them with the gelatin in another saucepan; pour the hot syrup in a thin stream into the egg white-gelatin mixture, beating simultaneously.
- Mixture will lose gloss and begin to hold shape. Fold in coconut and nuts.
- Pour into buttered 9-inch square pan. Let cool.
- Cut into pieces.
