Harvest Chowder
- 1 c. chopped onion
- 1 c. sliced carrots
- 2 1/2 c. diced potatoes
- 1 c. water
- 2 Tbsp. chicken bouillon
- 6 slices bacon, cooked and cut into small pieces
- 2 small cans corn, drained (optional)
- 3 Tbsp. flour
- 3 Tbsp. butter
- 3 c. milk
- 3 c. shredded Velveeta cheese
- Simmer onion, carrots, potatoes and water together for about 15 minutes.
- Add bouillon, corn (if desired) and cooked bacon. Simmer for about 10 minutes more.
- Melt butter in another large saucepan and add flour.
- Cook for about 1 minute, then add milk and cheese.
- Cook until smooth and thick, then combine with vegetables.
- Simmer over low heat until ready to serve.
- This can also be put in a crock-pot and simmered on low for several hours after cooking.
