Taste Of Texas Pasta And Chicken

  1. Combine olive oil, lime juice and red pepper in a large Ziploc baggy.
  2. Shake well; add chicken and marinate for at least 15 minutes.
  3. Cook pasta and drain.
  4. Add butter and lime; toss and keep warm.
  5. Remove chicken from marinade (discard marinade).
  6. Heat 1 tablespoon oil and cook chicken.
  7. Remove chicken; add garlic to skillet and cook until lightly browned.
  8. Add salsa and bring to a boil.
  9. Arrange pasta and chicken on plates; top with salsa mixture.
  10. Garnish with fresh lime slices.
  11. Serves 4.
