Seafood Gumbo
- 2 lb. fresh fish fillets, cut into 1/2-inch cubes
- 1 lb. fresh shrimp, shelled and deveined, cut into 1/2-inch pieces
- 1 pt. fresh oysters, drained
- 1 c. crab meat
- 4 lobster tails, shelled and cut into 1-inch pieces
- 2 Tbsp. margarine
- 2 Tbsp. flour
- 1/2 c. margarine
- 2 green peppers, cut in 1/2-inch pieces
- 2 onions, chopped
- 2 c. celery, chopped
- 2 cans tomatoes with juice, chopped
- 8 c. fish stock
- 1 tsp. salt
- 1 tsp. pepper
- 3 cloves garlic, minced
- 3 tsp. gumbo file
- Melt 2 tablespoons of
- margarine in saucepan; add flour and stir over heat until golden brown; set aside.
- Melt 1/2 cup margarine separately; saute green peppers, onions and celery until tender.
- Add tomatoes, stock, salt, pepper and garlic.
- Bring to a boil.
- Gradually stir in the flour mixture, stirring until well blended.
- Simmer 15 minutes.
- Add seafood and file; simmer 15 minutes more.
- Served over rice is nice!
- Serves 12 to 15.
