Gina'S German Knoepfla Soup
- 1 tsp. salt
- 1 or 2 eggs
- 1 c. water
- 3 1/2 c. flour (until dough is stiff)
- 1 tsp. baking powder
- 2 (10 3/4 oz.) cans chicken broth
- 3 c. diced potatoes
- 1 c. diced celery
- 3/4 c. diced onions
- garlic, cut into small pieces (optional)
- 1 c. half and half
- 1 (10 3/4 oz.) can cream of celery or chicken soup
- 1 tsp. salt
- 1 tsp. pepper
- 1 tsp. celery salt
- more water (if needed)
- In 4-quart kettle, boil chicken broth, potatoes, celery, onions and garlic.
- Add cooked knoepfla.
- When vegetables are almost done, add half and half, cream of celery or chicken soup, salt, pepper, celery salt and more water (if needed).
- Makes 3 1/2 quarts.
