Taco Stir-Fry
- 1 lb. lean ground beef
- 1/4 c. chopped onion
- 1 Tbsp. oil
- 1 c. whole kernel corn
- 1 (1 lb.) can tomatoes
- 2 Tbsp. chili powder
- 1 tsp. sugar
- 1 tsp. oregano
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 1/2 c. grated mild Cheddar cheese
- 1 (9 1/2 oz.) pkg. corn chips
- 2 small heads Boston lettuce, shredded
- Brown ground beef and onion in oil in a large skillet, stirring until crumbly.
- Pour off drippings.
- Stir in corn, tomatoes and seasonings; bring to a boil.
- Simmer, covered, over low heat for 10 minutes.
- Stir in 1 cup of cheese and corn chips. Cook until cheese is partially melted.
- Place lettuce on serving platter.
- Spoon ground beef mixture over top.
- Sprinkle with remaining 1/2 cup of cheese.
- Yields 6 servings, about 580 calories each.
