Taco Stir-Fry

  1. Brown ground beef and onion in oil in a large skillet, stirring until crumbly.
  2. Pour off drippings.
  3. Stir in corn, tomatoes and seasonings; bring to a boil.
  4. Simmer, covered, over low heat for 10 minutes.
  5. Stir in 1 cup of cheese and corn chips. Cook until cheese is partially melted.
  6. Place lettuce on serving platter.
  7. Spoon ground beef mixture over top.
  8. Sprinkle with remaining 1/2 cup of cheese.
  9. Yields 6 servings, about 580 calories each.
