Chocolate Chip Cookies
- 1 c. solid shortening
- 1/2 c. butter or margarine
- 1 1/3 c. granulated sugar
- 1 c. packed brown sugar
- 4 eggs
- 1 Tbsp. vanilla
- 1 tsp. lemon juice
- 2 tsp. soda
- 1 1/2 tsp. salt
- 1 tsp. ground cinnamon
- 1/2 c. rolled oats
- 3 c. all-purpose flour
- 2 large pkg. (12 oz. each) semi-sweet chocolate chips
- 2 c. chopped walnuts
- In a large mixer bowl, beat together on high speed the solid shortening, butter, granulated sugar and brown sugar until thoroughly combined, about 5 minutes. Beat in the eggs, one at a time, beating well after each addition. Beat in the vanilla and lemon juice.
- In a bowl, stir together the soda, salt, cinnamon, oats and flour. Beat dry ingredients into the creamed mixture until well combined.
- Mix in chocolate chips and nuts.
