Parslied Meat Loaf
- 2 lb. ground turkey
- 1 1/4 c. regular oats, uncooked
- 1 c. chopped fresh parsley
- 3/4 c. chopped onion
- 1/4 c. egg substitute
- 2 Tbsp. chopped green pepper
- 1 large clove garlic, minced
- 1/4 tsp. salt
- 1/2 tsp. dried whole thyme
- 1/2 tsp. black pepper
- 1/4 tsp. ground allspice
- 1/8 tsp. ground nutmeg
- 1/8 tsp. ground red pepper
- 1/4 c. catsup
- vegetable cooking spray
- Combine all ingredients, except the catsup and cooking spray, in a large bowl.
- Mix well.
- Shape mixture into a 9 x 5-inch loaf. Place loaf on a rack in a roasting pan coated with cooking spray. Bake for 1 hour and 15 minutes.
- Spread catsup evenly over meat loaf.
- Bake an additional 5 minutes.
- Remove from oven.
- Let stand 5 minutes before serving.
