Barbie'S Beach Dessert
- 2 1/4 c. finely crushed vanilla wafers, divided
- 1/2 c. (1 stick) butter or oleo, melted
- 1 pkg. (8 oz.) cream cheese, softened
- 1 tub (12 oz.) cool whip, divided
- 1 1/2 c. boiling water
- 1/4 c. sugar
- 2 pkg. very berry barbie gelatin
- 3/4 c. cold water
- ice cubes
- Mix
- 2 c. of wafer crumbs and butter in 13x9-inch baking dish.
- Press firmly in bottom and refrigerate.
- Beat cream cheese and sugar in bowl until smooth.
- Stir in 1/2 of cool whip.
- Spread over crust.
- Stir boiling water into gelatin in bowl for 2 minutes until dissolved.
- Mix cold water and ice to make 2 cups.
- Stir into gelatin.
- Refrigerate 5 minutes until gelatin is slightly thickened.
- Spoon over cream cheese layer.
- Refrigerate until firm.
- Add other 1/2 of cool whip and 1/2 c. crumbs.
