Fruit Cake Cookies
- 1 stick butter
- 1/2 stick margarine
- 1 c. sugar
- 1 c. light brown sugar
- 1 tsp. salt
- 1 tsp. baking soda
- 3 eggs
- 2 1/2 c. flour
- 1/2 lb. chopped pecans
- 1/2 lb. chopped fruit
- 1/2 lb. pineapple (red and green), cut up fine
- 1/2 lb. green cherries
- 1/2 lb. red cherries
- 1 lb. white raisins
- 1 c. apple brandy
- Cream butter and add both sugars, salt, soda and then eggs. Mix flour with chopped fruit and nuts.
- Add the fruit mixture to batter, then add brandy and mix well.
- Drop by teaspoon (very small amount) on greased cookie sheet and bake at 250u0b0 for 20 to 25 minutes (do not brown).
- Can use 2 pounds of mixed chopped fruit.
