Chicken Enchiladas
- 1 (12 1/2 oz.) can chunk chicken
- 1 (6 oz.) can refried beans
- 1 c. salsa of your choice
- 1 c. shredded Jack cheese
- 1 (4 oz.) can green chilies
- 1 (6 oz.) can black olives, chopped
- 1 c. white or green onions, chopped
- 1 (18 oz.) pkg. (12) tortillas
- 1 (10 oz.) can enchilada sauce
- 1 c. shredded Cheddar cheese
- sour cream
- Save some black olives and onions for garnish. Mix all ingredients except the flour tortillas, enchilada sauce, Cheddar cheese and sour cream. Lay out the tortillas and evenly fill and roll up each tortilla and place in greased baking dish. Pour the enchilada sauce over the top; sprinkle with the Cheddar cheese. Bake at 350u0b0 for 30 minutes or microwave until bubbly and heated through. When serving, add the sour cream, onions and black olives for garnish.
