Eldorado Beef Casserole
- 1 lb. small beef strips or hamburger
- 1 tbsp. onion
- 1/2 tsp. garlic salt
- 2 (8 oz.) cans tomato sauce
- 1 c. sliced ripe olives
- 1 c. or 1/2 pt. sour cream
- 1 c. small curd cottage cheese
- 3 to 4 canned chilies, seeded and chopped
- 1 pkg. crisp tortilla chips
- 2 c. or 1/2 lb. grated Monterey Jack cheese
- Brown beef.
- Add onion, garlic and tomato sauce.
- Combine sour cream and cottage cheese with chilies and ripe olives.
- Crush tortilla chips in bottom of well buttered 2 1/2-quart casserole. Add 1/2 meat mixture.
- Cover with 1/2 sour cream mixture. Sprinkle with 1/2 grated cheese.
- Repeat layers.
- Bake, uncovered, in 350u0b0 oven for 30 to 35 minutes.
- Garnish with reserved tortilla chips.
- Serves 6 to 8.
