Jam Cake (3 Layers)
- 4 eggs
- 2 c. sugar
- 1 c. buttermilk
- 3 c. flour, sifted
- 1 c. blackberry jam
- 1 c. crushed pineapple with juice
- 1 c. strawberry preserves
- 1 c. nuts (optional)
- 2 tsp. cinnamon
- 2 tsp. allspice
- 1 tsp. nutmeg
- 1 tsp. ginger
- 1 tsp. soda
- 2 sticks margarine or butter
- Sift spices with flour; cream butter and sugar.
- Add eggs, beating well.
- Add pineapple; continue beating.
- Mix soda with buttermilk; add alternately with flour and first mixture.
- Add jam and preserves.
- Bake at 350u0b0 for 30 or 35 minutes or until done. Makes 3 large layers; if you prefer, you can make half the recipe. Use any good caramel icing or using following:
eggs, sugar, buttermilk, flour, blackberry jam, pineapple, strawberry preserves, nuts, cinnamon, allspice, nutmeg, ginger, soda, margarine
