Carrot Apple Pineapple Cake

  1. Carrot, pineapple and apple pulp can be made by pulsing in a food processor.
  2. Add honey, oil and vanilla. Mix well.
  3. Sift dry ingredients together and then add until just blended.
  4. Fold in coconut and pecans.
  5. Pour into a greased and floured 9x13 pan.
  6. Bake at 350u0b0F for 50-60 minutes.
  7. To make muffins: Fill muffin pans 3/4 full and bake at 350u0b0F for 40-45 minutes.
