Bran Muffins
- 2 c. "Kretschmer" toasted wheat bran
- 2 c. All-Bran cereal
- 2 c. boiling water
- 4 c. buttermilk
- 1 c. melted shortening or oil
- 2 c. granulated sugar
- 1 c. packed brown sugar
- 4 eggs
- 5 c. flour
- 4 tsp. baking soda
- 1 1/2 tsp. salt
- 2 c. raisins
- In a very
- large
- bowltombine
- bran
- and cereal.
- Add boiling water; stir
- to moisten and let stand 10 minutes.
- Add buttermilk.
- Cream shortening
- and sugar.
- Beat in eggs one at a time.
- Addto
- bran
- mixture; stir until well blended.
- Mix together flour, soda
- and salt.
- Add raisins to flour mixture. Stir into bran mixture.
- Cover tightly with foil.
- Refrigerate 24 hours.
- Fill
- muffin tins lined with baking cups, 3/4 full. Bake at 350u0b0 for 20 to 25 minutes.
