Wayne'S Super Meat Loaf(Serves 10 Generously)
- 3 lb. ground chuck
- 1 1/2 lb. lean ground pork
- 3 large cans whole tomatoes
- 1/2 c. evaporated milk
- 2 Tbsp. salt
- 1 (24 oz.) box corn flakes
- 1 1/2 lb. ground veal
- 2 1/2 c. finely chopped onion
- 2 eggs
- 1/2 c. parsley flakes
- 1 Tbsp. black pepper
- In large roaster, combine all ingredients, except corn flakes and tomatoes.
- Drain tomatoes, saving juice.
- Crush individual tomato in your hand, reserving juice in bowl.
- Put tomato pulp only into meat mixture.
- Mix thoroughly.
- Start adding corn flakes, mixing in until mixture sticks together well.
- (May not need entire box of corn flakes.) Shape to fit roaster, allowing 1-inch clearance around edges.
- Pour tomato juice over meat mixture.
- Smooth the top with tomato juice.
- Bake at 350u0b0 for 3 hours (depending on thickness).
