Shrimp Scallop Primavera

  1. Chop pepper and onion into medium size chunks.
  2. Slice mushrooms.
  3. Mince garlic; peel shrimp.
  4. Rinse both shrimp and scallops and remove excess water.
  5. Heat large frying pan (medium heat for range) and add olive oil.
  6. Once the pan has heated, add garlic, pepper, onion and mushrooms.
  7. Stir the vegetables while cooking for approximately 2 minutes.
  8. Using a slotted spoon, remove the vegetables (to prevent overcooking), then add shrimp, scallops, black pepper, lemon pepper, Old Bay seasoning and sherry (optional).
  9. Cook for approximately 5 minutes, or until shrimp and scallops are tender to the touch of the fork.
