Caramel Apple Coffee Cake

  1. In a mixing bowl, beat eggs until foamy; gradually add sugar. Blend in oil and vanilla.
  2. Combine flour, salt and baking soda; add to egg mixture. Stir in apples and pecans.
  3. Pour into a greased 10-in. tube pan; bake at 350u0b0 for 1 hour and 15 minutes or until the cake tests done.
  4. Cool in pan on a wire rack for 10 minutes.
  5. Remove cake to a serving platter.
  6. For topping, combine all ingredients in a saucepan; boil 3 minutes, stirring constantly.
  7. Slowly pour over warm cake (some topping will run down onto the serving plate.).
