Pork With Mushrooms
- 8 small slices lean pork or veal
- salt
- 3 1/2 oz. flour
- 2 Tbsp. oil
- 1 lb. mushrooms
- 1 Tbsp. grated onion
- 1 c. sour cream
- 1/2 c. heavy cream
- Salt the meat slices and turn them in the flour.
- Heat the oil. Add the meat and fry until pink on both sides.
- Clean the mushrooms; cut into slices and add to the meat.
- Cook, covered, on a medium flame until the meat is done (approximately 15 minutes). Take out the meat and continue cooking the mushrooms until the liquid evaporates.
- Add the heavy cream and half of the sour cream and mix thoroughly.
- (If the sauce is too thin, add a bit of cornstarch.)
- Put the meat back in the pan and cook with the mushrooms for a minute or two.
- Serve with rice or potatoes with leftover sour cream in a separate bowl.
