Veal Curry(Yields 6 Servings)

  1. Cut veal in bite sized pieces and brown slowly in fat.
  2. When almost brown, add onion and continue browning.
  3. Sprinkle with curry powder over meat, add hot water and lemon juice; cover, simmer slowly 3/4 to 1 1/2 hours or until meat is tender.
  4. Combine cornstarch and cold water to a smooth paste, and stir slowly into the mixture. Continue cooking five minutes, stirring constantly. If too thick, add water to right consistency.
  5. Serve with rice mixed with minced parsley, if desired.
