Veal Curry(Yields 6 Servings)
- 1 1/2 lb. sliced veal
- 3 Tbsp. unsalted fat
- 1/2 c. onion, sliced thin
- 3/4 tsp. curry powder
- 1 tsp. lemon juice
- 3 c. hot water
- 3 Tbsp. cornstarch
- 1/4 c. cold water
- 3 c. cooked rice
- 1/3 c. minced parsley (optional)
- Cut veal in bite sized pieces and brown slowly in fat.
- When almost brown, add onion and continue browning.
- Sprinkle with curry powder over meat, add hot water and lemon juice; cover, simmer slowly 3/4 to 1 1/2 hours or until meat is tender.
- Combine cornstarch and cold water to a smooth paste, and stir slowly into the mixture. Continue cooking five minutes, stirring constantly. If too thick, add water to right consistency.
- Serve with rice mixed with minced parsley, if desired.
