Squash Dressing
- 2 lb. yellow squash
- 1/4 c. water
- 1 (6 oz.) pkg. cornbread, mix and baked as directed
- 2 c. milk
- 1/2 c. chopped celery
- 1/2 c. chopped onion
- 2 Tbsp. margarine
- 1 tsp. black pepper
- 1 (10 oz.) can cream of chicken soup
- 2 tsp. poultry seasoning
- 1/2 c. grated Cheddar cheese (optional)
- Preheat oven to 350u0b0.
- Cook squash in water in covered saucepan until tender.
- Drain and mash.
- Crumble baked cornbread into milk; set aside.
- Saute celery and onion in margarine until tender.
- Add pepper, soup, poultry seasoning and squash.
- Stir in bread mixture.
- Pour ingredients into a 2-quart casserole.
- Bake for 1 hour or until set.
- May top with cheese.
