Green Pepper Steak

  1. Cut beef across the grain into thin strips.
  2. Combine soy sauce, garlic and ginger.
  3. Add beef.
  4. Stir and set aside while preparing vegetables.
  5. Heat oil in large frying pan.
  6. Add beef and stir over high heat until brown.
  7. Taste; if not tender, cover and simmer 30 to 40 minutes over low heat.
  8. Turn heat up and add vegetables. Stir until vegetables are tender-crisp, about 10 minutes.
  9. Mix cornstarch and water; add to pan, stirring and cooking until thickened.
  10. Add tomatoes and heat through.
  11. Serve over cooked white or brown rice.
