Green Pepper Steak
- 1 lb. trimmed chuck or round steak
- 1/2 tsp. ground ginger
- 1 clove garlic
- 2 tomatoes, wedged
- 1 c. sliced bell pepper
- 1/4 c. soy sauce
- 1/4 c. vegetable oil
- 1 c. thinly sliced green onions
- 1 Tbsp. cornstarch
- 2 stalks thinly sliced celery
- Cut beef across the grain into thin strips.
- Combine soy sauce, garlic and ginger.
- Add beef.
- Stir and set aside while preparing vegetables.
- Heat oil in large frying pan.
- Add beef and stir over high heat until brown.
- Taste; if not tender, cover and simmer 30 to 40 minutes over low heat.
- Turn heat up and add vegetables. Stir until vegetables are tender-crisp, about 10 minutes.
- Mix cornstarch and water; add to pan, stirring and cooking until thickened.
- Add tomatoes and heat through.
- Serve over cooked white or brown rice.
