Pork Loin With Fruit Sauce

  1. Place roast in shallow roasting pan, and sprinkle roast with rosemary and peppers.
  2. Bake uncovered at 350 degrees for 1 hour.
  3. In a large saucepan, combine remaining ingredients.
  4. Bring ingredients to a boiling point, reduce heat and simmer for 20 minutes.
  5. Remove roast from oven and spoon about 1 cup sauce over roast, and return to oven and cook for 1 hour or till meat thermometer reads 165 degrees.
  6. Let roast stand 15 minutes before slicing.
  7. Spoon meat juices from roast into fruit sauce.
  8. Heat and serve with pork roast.
  9. Serve over hot cooked rice.
