Health Bread
- 6 1/4 to 6 1/2 c. plain flour
- 1 c. whole wheat flour
- 2 pkg. dry yeast
- 1 c. quick rolled oats
- 1 c. whole bran cereal
- 1/2 c. molasses
- 1 c. raisins
- 2 1/2 c. boiling water
- 1 1/2 c. cream-style cottage cheese (12 oz.)
- 2 Tbsp. shortening (oil)
- 2 tsp. salt
- In large bowl, thoroughly stir together 2 cups flour, whole wheat flour and yeast.
- In another bowl, combine oats, bran cereal, raisins, boiling water, cottage cheese, oil and salt. Stir mixture constantly until oil is mixed in.
- Add molasses to dry ingredients in mixer bowl.
- Beat 1/2 minute at low speed, 3 minutes at high speed.
- By hand, stir in enough flour to make a medium stiff dough.
- Turn out on floured surface and knead until smooth and elastic.
- Place in greased bowl and grease top of dough.
- Let rise until double, about 1 hour.
- Punch down and make into 3 loaves.
- Let rise and bake 35 to 40 minutes in a 375u0b0 oven.
