Pork And Apple Pie

  1. Preheat oven to 350^F.
  2. Brown the pork with 1/4 cup of the butter and the chopped onion.
  3. Reduce the heat and simmer for 30 minutes,covered.
  4. Add the apples, thyme, A-1 Sauce and parsley.
  5. Continue cooking for 15 minutes.
  6. Combine the cornstarch and water to make a slurry and pour over pork.
  7. Stir well, add sherry and remove from heat.
  8. Pour into pie shell.
  9. In a separate bowl, mash the hot potatoes with 1/4 cup of the butter and the milk.
  10. Add salt, pepper and nutmeg.
  11. Spread over the pork mixture to cover.
  12. Dot the potatoes with the remaining butter.
  13. Bake 25 minutes, until golden.
  14. I like to use a pastry bag with a wide tip to pipe the potatoes onto the pork mixture.
  15. It gives the pie a more attractive appearance when it comes out of the oven.
