Stovetop Shepherd'S Pie(Preparation Time - 15 Minutes; Cooking Time - 20 Minutes)
- 1 (1 lb.) ground turkey
- 1 medium onion
- 1 tsp. chili powder
- 1 can (10 3/4 oz.) condensed corn soup
- 1/4 c. water
- 1/8 tsp. pepper
- 2 c. mashed potatoes (made from instant mix)
- 1/2 c. shredded reduced Cheddar cheese (2 oz.)
- 1 Tbsp. chopped green onion
- In 10-inch oven safe skillet cook turkey, onion and chili powder over medium-high heat until turkey is cooked through and onion is tender, stirring to break up turkey.
- Stir in half the soup, the water and pepper.
- Bring to boiling.
- Reduce heat to low; simmer 5 minutes.
- Combine potatoes, Cheddar cheese, green onion and remaining soup in medium size bowl.
- Spoon over meat mixture (using ice cream scoop), making 5 mounds.
- Cover skillet handle with foil to protect from heat.
- Broil 6 inches from heat until potatoes begin to brown, 3 minutes.
- Yields 4 servings.
