Pork Piccata(This Dish Tastes Delicious Served With Rice)
- 6 boneless pork cutlets
- 1 tsp. salt
- 1/2 tsp. pepper
- 3 Tbsp. flour
- 3/4 tsp. dried oregano
- 3 Tbsp. olive oil
- 2 cloves garlic
- 1 large onion
- 1 1/2 c. beef broth
- 1/4 c. fresh lemon juice
- 4 large ripe tomatoes
- 1/3 c. oil
- 1/4 c. chopped onion
- 2 cloves chopped garlic
- 1 Tbsp. chopped basil
- 1 Tbsp. chopped parsley
- 3 Tbsp. Italian salad dressing
- salt and pepper to taste
- Cube tomatoes and place in medium bowl.
- Saute garlic and onion in 1 pound of oil until golden brown and add to tomatoes. Add remaining ingredients into bowl with tomatoes, oil, basil, parsley, salad dressing, salt and pepper.
- Set aside.
- Cook 1 pound of pasta; drain and add tomato mix on top of pasta.
- Sprinkle with Parmesan cheese.
