Chicken Broccoli 2
- 2 whole boned, skinless chicken breasts, cut into 1/8-inch slices
- 3 Tbsp. soy sauce
- 1 Tbsp. vegetable oil
- 4 c. broccoli, cut up or 1 (20 oz.) pkg. frozen, rinsed in hot water
- 1 c. chicken broth
- dash of garlic powder
- 1 c. mushrooms, cut up or 1 (4 oz.) can, drained
- 1 Tbsp. lemon juice
- 1 Tbsp. cornstarch
- 1 Tbsp. sliced pimentos
- 2 Tbsp. toasted sesame seed
- In small bowl, combine chicken, soy sauce and vegetable oil. Place broccoli and 1/2 cup broth in wok or large skillet.
- Cook 5 minutes; stir every minute.
- Push to side.
- Increase heat.
- Add chicken mix and garlic; stir-fry 3 minutes and push to side.
- Add mushrooms; stir-fry 1 minute.
- Combine all ingredients in wok. Combine lemon juice and cornstarch with remaining 1/2 cup broth. Stir into wok mixture.
- Heat 2 minutes; garnish with pimentos and sesame seed.
- Serve over rice or chow mein noodles.
