Deluxe Pork Chop Suey
- 1 c. fresh lean pork, shredded
- 1 medium onion, sliced thin
- 1 Tbsp. soya sauce
- 3 c. or 1/2 lb. fresh bean sprouts
- 1/2 c. shredded bamboo shoots
- 1/2 c. sliced water chestnuts
- 1/2 c. sliced canned mushrooms or 1 c. fresh, sliced
- 1/2 to 3/4 c. sliced celery
- salt and pepper to taste
- 1 Tbsp. cornstarch
- 1/3 c. water
- 2 Tbsp. oil
- Marinate strips of pork and onion in soya sauce for 20 minutes. Dissolve cornstarch in water.
- Heat oil until it begins to smoke in a wok or skillet.
- Add pork and onion and stir-fry until pork is browned. Cover and cook 3 more minutes until thoroughly cooked.
- Uncover and add bean sprouts and celery. Stir and cook 2 minutes. Add rest of ingredients and stir-fry thoroughly.
- Cover and cook 3 more minutes.
- Uncover and add cornstarch solution, stirring thoroughly, before adding to the wok.
- Shut heat off and stir all food together. Serve over rice. Serves 4 to 6.
