Noodle Cheese Casserole
- 3 qt. boiling water
- 3 tsp. salt
- 3 1/2 c. wide noodles
- 1/4 c. minced onion
- 1/4 c. minced green pepper
- 1/2 stick margarine
- 2 tsp. salt
- dash of pepper
- 1 tsp. celery seed
- 1 1/3 c. milk
- 1 lb. cottage cheese
- 2 Tbsp. lemon juice
- 3 Tbsp. flour
- Break the noodles into 1 1/2-inch pieces; cook in the boiling, salted water until tender, about 10 minutes, stirring often.
- Drain thoroughly.
- Heat oven to 350u0b0.
- In saucepan, saute onion and green pepper in butter for about 3 minutes.
- Stir in the flour and seasonings, then stir in the milk gradually and cook, stirring, until the sauce is smooth and thick.
- Grease a 2-quart casserole. Turn the sauce into it.
- Add noodles, cottage cheese and lemon juice; toss until well blended.
- Sprinkle with paprika.
- Bake, uncovered, for 40 to 50 minutes.
- Serves 4 to 6.
