Rio Vista Balls
- 6 chopped hard-boiled eggs
- 2 slices crumbled crisp bacon
- 1 tsp. minced onion
- 1/2 tsp. salt
- speck pepper
- 1/4 tsp. prepared mustard
- 1/4 c. mayonnaise
- 2/3 c. grated process Cheddar cheese
- 1 whole Gouda cheese
- 1 c. sour cream
- 1/3 c. white table wine or chicken broth
- 2 tsp. grated onion
- 1/4 c. finely chopped green pepper
- 1/4 c. finely chopped pimiento
- seasoned salt to taste
- Cut a 1/2 to 1-inch thick slice from top of cheese.
- Using a spoon, scoop out cheese, leaving a firm shell.
- Spread cheese very fine and measure.
- Should yield 1 quart.
- Combine cheese with sour cream, wine and grated onion.
- Beat until fluffy and well blended. Stir in green pepper, pimiento and seasoned salt.
- Pile lightly back into the cheese shell.
- Makes 3 1/2 cups.
