Rio Vista Balls

  1. Cut a 1/2 to 1-inch thick slice from top of cheese.
  2. Using a spoon, scoop out cheese, leaving a firm shell.
  3. Spread cheese very fine and measure.
  4. Should yield 1 quart.
  5. Combine cheese with sour cream, wine and grated onion.
  6. Beat until fluffy and well blended. Stir in green pepper, pimiento and seasoned salt.
  7. Pile lightly back into the cheese shell.
  8. Makes 3 1/2 cups.
