Cajun Dirty Rice

  1. Brown gizzards and livers in oil until done.
  2. Add onion, green onions, garlic, salt, parsley, celery and bell peppers.
  3. Stir-fry for about 2 minutes on medium heat, stirring constantly.
  4. Do not overcook.
  5. Vegetables should be a little crispy; drain if necessary.
  6. Add red pepper.
  7. Pour this mixture into a large bowl. Add cooked rice; mix well.
  8. This will taste better the next day.
