Strawberry Meringue Pie
- 12 (2-inch) sq. saltine crackers with unsalted tops, crushed
- 3 egg whites, at room temperature
- 1 tsp. salt
- 1 c. granulated sugar, divided
- 1 tsp. vanilla
- 1/4 tsp. cream of tartar
- 1/2 c. chopped pecans
- 1 (4 oz.) bar sweet cooking chocolate
- 1 Tbsp. butter
- 4 c. hulled strawberries
- 1 c. heavy cream, whipped with 2 Tbsp. confectioners sugar
- Sprinkle 2 tablespoons cracker crumbs on bottom of well-greased 9-inch pie plate (reserve rest).
- Beat egg whites until foamy; add tartar and salt.
- Beat until stiff peaks form. Gradually beat in granulated sugar, 1 tablespoon at a time, beating until very stiff.
- Beat in vanilla until blended.
- Fold in pecans and cracker crumbs.
- Spread over bottom and sides of pie plate.
