Crab Cakes

  1. Combine egg, 1/4 cup of the crushed potato chips, coconut, green onion, mayonnaise or salad dressing, parsley, and coriander in mixing bowl.
  2. Stir in crabmeat; mix well.
  3. Shape into 12 patties 1/2 inch.
  4. Coat patties with remaining crushed potato chips.
  5. Heat oil in large skillet.
  6. Add crab patties.
  7. Cook 2 to 3 minutes on each side until golden.
  8. Serve immediately with Herb Sauce.
  9. Herb Sauce- Combine all ingredients in a small bowl.
  10. Cover and refrigerate 1 hour to allow flavors to mellow.
