Cashew Chicken
- 1 to 3 lb. chicken, cut off bone
- 1/2 c. flour
- 1/4 c. cornstarch
- 1 egg
- 1/2 c. milk
- 1 box rice (chicken flavor)
- 12 oz. cashews
- 1 tsp. soy sauce
- 1 bunch green onions
- 2 chicken bouillon cubes
- 1 c. water (hot)
- 2 tsp. sugar
- 2 Tbsp. cornstarch
- 1/4 c. water (cold)
- Cut chicken into 1 1/2 inch pieces.
- Mix flour and cornstarch together.
- Flour chicken and set aside.
- Mix egg and milk.
- Soak chicken in mixture 10 minutes.
- Re-dip into flour and fry in hot oil until golden brown.
- Mix bouillon cubes, 1 cup water, sugar, soy sauce and cornstarch until dissolved.
- Cook on medium heat until thick.
- Cook rice according to directions.
- Place chicken and rice on plate.
- Cover with sauce, cashews and onions.
- Use more soy sauce if desired.
