Cincinnati Chili
- 1 qt. water
- 2 lb. ground chuck
- 2 medium onions, chopped
- 2 (8 oz.) cans tomato sauce
- 1/4 tsp. ground allspice
- 1/4 tsp. garlic powder
- 4 Tbsp. chili powder
- 1 tsp. cumin seed or ground cumin
- 1/2 tsp. cayenne (red pepper)
- 1/4 tsp. ground cloves
- 2 Tbsp. brown vinegar
- 1 large bay leaf
- 1 1/2 tsp. cocoa or 1/2 sq. chocolate
- 2 tsp. Worcestershire sauce
- 2 tsp. cinnamon
- 1 1/2 tsp. salt
- 4 drops Tabasco sauce
- Put water, ground chuck and chopped onions in saucepan; do not brown meat.
- Simmer for 30 minutes.
- Add remaining ingredients. Simmer, uncovered, for 3 hours.
- Remove bay leaf.
- For last hour, pot may be covered after desired consistency is reached.
