Chicken Fiesta Casserole
- 2 1/2 to 3 lb. chicken pieces
- salt, pepper, paprika
- 2 Tbsp. margarine
- 1/4 lb. pork sausage
- 3/4 c. sliced green onions
- 3 c. cooked rice
- 1 can whole kernel corn with peppers, drained
- 2 c. cooked broccoli
- 2 tsp. lemon juice
- 2 c. shredded Cheddar cheese
- Preheat oven to 350u0b0.
- Season chicken with pepper, salt and paprika.
- In large skillet, melt butter.
- Add chicken to skillet. Brown well.
- Drain chicken on paper towels.
- Set aside.
- Cook sausage, celery and onions in same skillet over medium-high heat, stirring frequently, until vegetables are crisp-tender.
- Add rice, corn, broccoli and lemon juice.
- Mix well.
- Pour into shallow baking dish.
- Arrange chicken on top of rice mix, pressing chicken slightly into rice mixture.
- Sprinkle with shredded cheese.
- Cover with foil.
- Cook until chicken is no longer pink in center. Uncover.
- Lightly brown cheese.
