Apple Doughnuts
- 4 c. biscuit mix
- 1/2 c. sugar
- 2 c. canned apple slices, chopped
- 1/4 c. milk
- 2 tsp. vanilla extract
- 3 eggs
- 1/2 tsp. cinnamon
- 1/4 tsp. ginger
- 1/2 tsp. nutmeg
- 1/2 c. apple juice
- 1 1/2 tsp. lemon juice
- 4 c. confectioners sugar
- 1/2 c. coconut, toasted or tinted
- Combine biscuit mix and sugar; add chopped apples, milk, vanilla, eggs and spices.
- Stir until well blended.
- Knead dough on a heavily floured board until smooth.
- Roll out dough about 1/2-inch thick.
- Cut out doughnuts with a floured 3-inch doughnut cutter.
- Drop doughnuts, a few at a time, into 400u0b0 oil about 2 inches deep in pan.
- Cook about 1 minute on each side or until evenly browned.
- Drain on paper towels.
- Bring apple juice and lemon to a boil.
- Stir in confectioners sugar and beat until smooth.
- Spoon about 2 tablespoons glaze over each doughnut while warm.
- Roll half of glazed doughnuts in toasted or tinted coconut. Yield:
- 2 dozen.
