Apple Doughnuts

  1. Combine biscuit mix and sugar; add chopped apples, milk, vanilla, eggs and spices.
  2. Stir until well blended.
  3. Knead dough on a heavily floured board until smooth.
  4. Roll out dough about 1/2-inch thick.
  5. Cut out doughnuts with a floured 3-inch doughnut cutter.
  6. Drop doughnuts, a few at a time, into 400u0b0 oil about 2 inches deep in pan.
  7. Cook about 1 minute on each side or until evenly browned.
  8. Drain on paper towels.
  9. Bring apple juice and lemon to a boil.
  10. Stir in confectioners sugar and beat until smooth.
  11. Spoon about 2 tablespoons glaze over each doughnut while warm.
  12. Roll half of glazed doughnuts in toasted or tinted coconut. Yield:
  13. 2 dozen.
