World Champion Bottled Salsa
- 14 cups tomatoes, chopped (romas whole, others seeded)
- 3 cups onions, chopped
- 1/2 cup serrano pepper, chopped very fine (whole, seeds included)
- 1 cup jalapeno, chopped very fine (whole, seeds included)
- 5 garlic cloves, pressed
- 3 tablespoons salt
- 1/2 cup vinegar
- 1/2 cup tomato sauce
- 1 tablespoon chili powder
- 1 tablespoon garlic powder
- 3/4 teaspoon cumin
- 2 bunches cilantro, chopped
- Mix tomatoes, onions, serrano peppers, jalapeno peppers, pressed garlic, and salt.
- Simmer approximately 5 minutes, then strain off and discard 5°C liquid.
- Add vinegar, tomato sauce, chili powder, garlic powder, cumin, and cilantro. Mix well and simmer another 5 minutes.
- Bottle and process in a water bath for 15 minutes.
