Spicy Beef And Asparagus
- 1 lb. beef (top round steak)
- 1 egg white
- 1 Tbsp. cornstarch
- 1 tsp. dry sherry
- 1/2 tsp. each salt and pepper
- several dashes bottled hot sauce
- 1 Tbsp. soy sauce
- 1 Tbsp. catsup
- 1 tsp. red wine vinegar
- 1/2 tsp. sugar
- 2 Tbsp. cooking oil
- 1 clove garlic, minced
- 3/4 lb. fresh asparagus, cut into 1-inch lengths (2 c.)
- 1 c. thinly sliced fresh mushrooms
- 1/4 c. thinly sliced scallions
- Partially
- freeze
- meat,
- then thinly slice meat across the grain into bite-size strips.
- In a bowl, combine meat with egg white,
- cornstarch,
- sherry,
- salt, pepper and hot sauce, working seasoning
- into
- meat
- with
- your
- hands.
- Set aside. Combine soy,
- catsup, vinegar and sugar and set aside.
