Pepper Steak
- 2 c. water
- 1 Tbsp. soy sauce
- 1 pkg. French onion soup and recipe mix
- 1 1/2 tsp. minced fresh ginger or 1/2 tsp. ground ginger
- 3 Tbsp. Mazola corn oil
- 2 medium red or green peppers, thinly sliced
- 1 clove garlic, minced
- 1 lb. flank steak, cut in strips
- cooked rice
- In a small bowl stir water, soy sauce, soup mix and ginger until blended.
- In a large skillet heat 2 tablespoons corn oil over medium-high heat.
- Add peppers and garlic; stir-fry 2 to 3 minutes or until tender-crisp.
- Remove.
- Heat remaining corn oil in skillet.
- Add beef, half at a time; stir-fry 2 to 3 minutes. Remove as browned.
- Return beef and peppers to skillet.
- Stir in soup mixture.
- Stirring constantly, bring to a boil and boil 1 minute.
- Serve over rice.
- Serves 4.
